Generally, to start off as Gaul (actually any faction but Gaul especially) you should hold all of your provinces. Don't give ground to buy time. You need money more than anything else.

As to where you are now, it sounds like your empire consists of: Italy, eastern Gaul, one or two provinces in Greece, and perhaps a newly conquered territory in Spain.

My advice would first be to gain control of all the isles in the western mediterranian. These are excellent cash cows and they don't require much defending due to their isolated nature. Be sure your ports and trade buildings have been upgraded to the fullest extent possible. Remember that "Money makes war, like other things, go smoothly." Militarily, I would highly recomend upgrading your archery ranges to where you can build the Gallic elite unit, (one of my personal favorites in the game) the Forrester Warband! To make these already fantastic units 'über units', you can build the temple that gives experience bonuses (the name slips my mind) in the city where you train them. In a city nearby, built the temple that gives the weapon upgrade to missle units (it's name also evades me). Once you train the units with the experience bonus, immediately march them over to the city that gives the missle weapon bonus. In the end you have forrester warband with three experience, gold weapon upgrade, and, if you have the armorer built, silver armor upgrade. These forrester warband make mince-meat out of almost any enemy forces. They can also be brought into melee; in which they give a pretty good account of themselves. Being able to hide anywhere sure doesn't hurt either.

Put your forrester warbands on the flanks where the enemy won't run into them, draw the enemy into your main line, engage, and then bring out the hidden archers to fire into the backs of your soon-to-be-routing foes! Mop up fleeing survivors and your army will come out victorious every time.
