Stable upgrades increase the recruitment pool/replenish rate, which might be useful, if you expect to loose a lot of cavalry in the battles to come.
I can't remember if the spanish need any stable upgrades to access any types of unique castle cavalry - I usually rely on Gendarmes from cities and Jinetes. |

I'd say stables are a waste with Spain, unless you need to train A LOT of cavalry.
They get all they need from the castles themselves, and when they later get Gendarmes from cities, you don't really need castles for cavalry anymore (iirc you can get Jinettes from cities too). |

Stables not only increase the number of units available for training, they also increase unit 'growth' rate.
"iirc you can get Jinettes from cities too" - Nope. That's Portugal, not Spain. Personally I'm very cavalry-heavy with Spain, so it depends on playing style I guess. |
