I got back into my game (France, Early, Normal, almost have the Kraks!!!), and I launch a crusade to Edessa. Byzzies control Edessa, but no big deal. By the
time my crusade gets there, I have a over double the size of their army (granted, almost half the crusade is peasants), so I go into the fight.
First time through I get roughed up enough that our morale is suffered enough and force the rout.
In two rounds I reset everything and reattack. This time I have successfully routed every unit on his side except for 1 unit of ~60 varangian guards, and like 1 unit of ~10 archers. I have Templars, Order Foot, horse archers, militia, archers, spearmen, and about 400 peasants. I attack from all angles, and those fricking varangians actually win the battle.
I attack with horses, spear, and swords, all failing miserably! How can I get rid of that unit? It doesn't look like anything I can produce can stand up to it... horse archers in skirmish???
